Horteria Moscova - Milano

June 24, 2023

The new address at Via della Moscova 24 in Milan is an authentic kitchen that aims to be a tool for introducing people to the culture of food in a genuine and trustworthy environment.

Horteria Milano is a place where culinary experimentation is enriched by the awareness of its impact on the world. The project is led by two young individuals under 35, Giorgia Codato, born in 1988, and Mauro Salerno, born in 1990.

The restaurant was born in 2017 from Giorgia's desire to create a place where one can "feel good" along with food. It was in Mirano that the fateful encounter between her and Mauro took place. While traveling for work, Mauro was captivated by Giorgia's project and passion. This led to the decision to open a new branch of Horteria in the metropolitan city of Milan.

Horteria is green without being strictly vegan or vegetarian. The selection of products is sourced from a very short supply chain, such as Domus Salerno, Mauro Salerno's family-owned agricultural company located in the green heart of the Cilento National Park, in Vallo di Diano and Alburni. The precious extra virgin olive oil, which can be tasted alongside the dishes, comes from there. The name of the restaurant itself, Horteria, clearly refers to the authenticity of homegrown products. However, it is not a restaurant exclusively for vegetarians but for those who appreciate a balanced and thoughtful diet while also embracing gourmet experiences. Meat and fish are not excluded, but the focus is equally placed on vegetables and their transformation. The kitchen boasts a commitment to sourcing quality ingredients, maintaining a short supply chain, and embracing creativity. Passion and creativity complete the experience.

The design of the restaurant follows this philosophy, with a clean and vibrant atmosphere featuring plants as decoration and protagonists in many dishes. The dining area has its own distinctive ambiance, characterized by plants, wood, clay, and corten steel, creating a context with strong expressive elements. The dining space is intimate and cozy, just like the attentive and caring service, directly managed by Giorgia and Mauro.

Their strong focus on sustainability and their pronounced sense of creativity are not only expressed through the dishes but also highlighted in the wine list and menu, which are cleverly crafted using food waste. The first is created from grape skins, while the second utilizes orange peels.
